Vegetarianism is the practice of following a plant-based diet including fruits, vegetables, cereal grains, nuts, and seeds, with or without dairy products and eggs. A vegetarian does not eat meat, including red meat, game, poultry, fish, crustacea, and shellfish, and may also abstain from by-products of animal slaughter such as animal-derived rennet, found in some cheeses, and gelatin. Vegetarians may consume these or other unfamiliar animal ingredients unknowingly, however.

Vegetarianism may be adopted for ethical, health, environmental, religious, political, cultural, aesthetic, economic, or other reasons, and there are a number of vegetarian diets. A lacto-vegetarian diet includes dairy products but not eggs, an ovo-vegetarian diet includes eggs but not dairy products, and an ovo-lacto vegetarian diet includes both eggs and dairy products. A vegan diet excludes all animal products, such as dairy products, eggs, and usually honey. Many vegans also seek to avoid using any other animal-derived products, such as clothing and cosmetics.

Semi-vegetarian diets consist largely of vegetarian foods, but may include fish or poultry, or other meats on an infrequent basis. A pescetarian diet, for example, includes fish but no meat. Those with diets containing fish or poultry may define "meat" as mammalian flesh and may identify with vegetarianism. However, vegetarian groups such as the Vegetarian Society have stated that diets containing fish and poultry are not vegetarian, because fish and birds are animals.

A. When I first became a vegetarian I felt really weak, solely due to the lack of protein I was consuming. Try to eat more foods like legumes (nuts), tofu, and meat substitutes. I eat a lot of soy which is my main source of protein.

This is an older book, but has some good, simple recipes: Quick Vegetarian Pleasures: More than 175 Fast, Delicious, and Healthy Meatless Recipes by Jeanne Lemlin This is another good one for easy recipes with some good variety also: Student's Vegetarian Cookbook, Revised: Quick, Easy, Cheap, and Tasty Vegetarian Recipes by Carole Raymond Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World is one of my favorites. Amazing variety and well worth the price! Some of the recipes have less common ingredients and a few are complicated, but a great many of them are easy enough for a beginner and are very tasty! How do I know what foods are vegetarian at restaurants?
Q. I eat out a lot, but now I'm switching to vegetarian. How hard is it to eat out being a vegetarian? I'm worried about hidden animal ingredients. I especially love Chinese. If I get tofu and veggies, can I be fairly certain that is vegetarian?

A. Ask, ask, ask! Usually, that Chinese dish is safe, but you can never be too certain. In Asian foods, ask if they have added fish sauce, oyster sauce, fish oils, etc. In all soups, ask if they used beef, chicken, or any other kind of meat broth or stock. In Mexican food, the beans often have lard in them. If the server isn't sure, ask them to ask the chef. Most restaurants are very helpful. I often have to order things that aren't actually on the menu. I just find foods that are on the menu and combine them. Or I will order a pasta or salad without the meat. Good luck!
